Wasps are meat-eaters, killing flies, caterpillars, spiders, and other insects. So, people often, and probably correctly, ask, Why get rid of them if they are doing us a service?
The adult wasp is unable to digest these insects, but the grubs can. The adult wasp takes its prey back to the nest, where it feeds it to the grubs.
The grub digests it, and its waste product is a sweet, sticky substance that the adult wasp eats as a reward for bringing it the food. When there are enough grubs to reward all the adults, they will usually leave people alone. When this balance is lost, then we see aggressive wasp behaviour.
As these grubs mature into adults, the nest eventually becomes imbalanced, with more adults than grubs. Consequently, even if the adult brings food back, the grubs cannot produce enough sticky reward for all of them.
As the adults become hungry, they often become irritable and are compelled to seek out their preferred food source. Every year, it becomes clear when this point has been met, as wasps try to get into your fizzy drinks, onto your jam, and other sugary snacks. They won't take no for an answer.
This is when you see people flapping in an attempt to get them to fly away; they won't. This is when people get stung.
As we come into winter and the sun fades and the night draws in, we're often called to wasps invading office blocks. The warm building and office lights attract wasps who have previously been in the roof space or air brick, again, people get stung.
